Red Curry Thai Noodles


1 package of whole grain spaghetti

1 can of coconut milk

2 TBSP red curry paste

1 TBSP fresh ginger, grated

2 TBSP cilantro, chopped

1 onion, sliced

1 red or yellow pepper, sliced

3 garlic cloves, chopped


Cook pasta according to package instructions. Soften onion, pepper and garlic in a skillet. Add coconut milk and curry paste, simmer until heated through and add cilantro. Add everything to cooked pasta and serve.
