Quinoa Salad

  • 2 cups cooked quinoa
  • ½ cup sliced black olives
  • ½ cup diced green bell peppers
  • ⅔ cup quartered grape tomatoes
  • ½ cup diced cucumber
  • ¼ cup capers


  • 2 tbsp fresh parsley
  • 2 tbsp fresh basil
  • ½ cup coconut
  • ½ cup lemon juice
  • 3 cloves fresh garlic
  • 2 tbsp pure maple syrup
  • 2 tsp Italian seasoning
  • 1 tbsp nutritional yeast
  • ½ tsp salt

Mix salad ingredients together in a bowl. Add all dressing ingredients together in a blender. Blend until smooth and creamy. Add dressing to taste.

Southwestern Buddha Bowl


1 cup cooked quinoa 

2 cups fresh spinach 

1 cup black beans

1/3 cup chopped yellow pepper

1/3 cup diced tomatoes

1/2 avocado 

1/3 cup shredded carrot


1 chopped red bell pepper

1 juiced lemon

1/4 cup fresh cilantro 

1/2 tsp salt

1/2 tsp pepper

2 tbsp tahini

1-2 cloves of fresh garlic


Simply stack all your Buddha Bowl ingredients in a large bowl. 

Dressing: Add all ingredients to a blender and blend to desired consistency, then pour over your bowl. 

The beauty of the Buddha Bowl is that it's so simple. Feel free to experiment and have fun with it.
